“Kontosouvli is a traditional Greek dish made from large chunks of pork, marinated with a fragrant blend of herbs and spices, then skewered and slowly roasted—similar to gyros or souvlaki. Its marinade often includes garlic, oregano, thyme, rosemary, paprika, olive oil, lemon juice, and red wine. Slowly cooked on a large spit over an open flame, it develops a delicious crust while staying juicy inside.
